SALADS


Ingredients:1 cup diced apple
1/2 cup orange sections
1/2 cup sweet lime sections
1/2 cup thick banana slices
1/2 cup pineapple slices
For Dressing:1/2 cup mayonnaise
1 tbsp orange squash
1 tsp lemon juice
100g fresh cream
1 tbsp celery chopped
Salt and pepper to taste
All Season Fruit Salad

Method:
  1. To prepare all season dressing, mix all the dressing ingredients together in a bowl. Mix gently and evenly to get a smooth consistency.
  2. Prepare all fruit pieces and mix dressing as required.
  3. Chill salad before serving. Serve extra dressing separately.





Ingredients:4 sweet firm apples - peeled, and cut into pieces
2 cups fresh yogurt - tied in muslin cloth and hung for an hour to remove excess water
100 gm cheese - grated
1/2 tsp salt
2 tsp mustard
1 cucumber - thinly sliced (optional)
1 head lettuce - leaves washed and separated
Apple Yogurt Delight

Method:
  1. Mix apples, yogurt, cheese, salt and mustard together. Chill for an hour.
  2. On a flat serving dish arrange lettuce leaves in a circle. 
  3. Pile the apple mixture on the lettuce leaves. Surround with evenly placed cucumber slices.
  4. Chill for another hour before serving.
  5. This delicious and unusual salad goes excellently with roast meat and thinly sliced brown bread.
    Serves 4



Ingredients:25 gm butter
2 tsp ground cumin
150 ml soured cream
450 gm beet root, peeled and diced
Salt and pepper to taste
Beetroot Salad With Sour Cream & Cumin

Method:
  1. Melt the butter, sprinkle in the cumin and cook for one to two minutes, stirring.
  2. Add the soured cream, beet root, salt and pepper to taste.
  3. Cook until the beet root is heated through, stirring gently.
  4. Transfer to a warmed serving dish, and serve at once.




Ingredients:1 apple
1/4 cup mayonnaise sauce
10g milk cream
10g walnuts
10 salad leaves
1 tsp mustard powder
1 egg
1 tsp salad oil
1 tsp sugar
Salt to taste
For preparing mayonnaise sauce:Take the egg yolk from the egg and to this, add salt, sugar, mustard powder. Pour oil drop by drop into the above mixture and mix well. This becomes the mayonnaise sauce.
WalDorf Salad

Method:
  1. Cut apple into pieces and soak in water, and arrange them on a plate.
  2. Mix mayonnaise sauce, milk cream and pour on the pieces.
  3. Sprinkle the walnuts on the plate.
  4. Serve when chilled.





Ingredients:1 cucumber, sliced into thin pieces
6 tomatoes, chopped
2 onions, chopped
2 green chilies, chopped
1/2 tsp chili powder
2 tbsp coriander leaves
2 tbsp sugar or jaggery
Marble size of tamarind
Salt to taste
Sweet & Sour Salad

Method:
  1. Soak tamarind in 2 tbsp of hot water for 5 minutes. Squeeze and strain out thick tamarind juice from it.
  2. Mix salt, chili powder, sugar and strained tamarind juice into the chopped vegetables.
  3. Stir well and chill the vegetables till required.
  4. Serve with bread slices.
